Carmel Apple Cake


Carmel Apple Cake
2 c sugar
2 eggs
1 c oil
2 tsp vanilla
3 c finely chopped apples
2 c flour
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1 c chopped nuts
Topping
1/2 c brown sugar
1/4 c butter
3 TB milk
1 tsp vanilla
Cream sugar & eggs, add oil & vanilla, add chopped apples, combine flour, salt, soda, cinnamon & nuts.
13x9 greased pan 350 degrees for 45-50 min(my oven only took 40 minutes)
Topping: in pan bring to a boil, milk, butter, brown sugar & vanilla. Boil for 3-4 minutes until thickens slightly. While cake is warm from the oven, pierce with a fork & pour on the topping.
Dessert for tomorrow family dinner night. We are having BBQ pulled pork, beans, broc/cauliflower salad, chips , watermelon & cake for dessert.
