Zucchini Casserole

The last thing I made with the HUGE zucchini Chuck brought home

Zucchini Casserole

Spray 9x13 pan

place sliced or shredded zucchini in pan & salt & pepper

In sauce pan:

1 stick butter

8 oz sour cream

1 can cream of chicken or cream of mushroom soup

8 oz shredded cheddar cheese

stir until the cheese is melted, pour over zucchini

Topping crush one sleeve of Ritz crackers, sprinkle over top of casserole & then drizzle melted butter on top

cook 350 degree for 45 minutes
